Black and white are considered opposites because they are exact inverse reactions to light.
White objects reflect all wavelengths of visible light back to your eyes. Because you see a balanced mixture of all the colors of the spectrum at once, your brain interprets the surface as white.
Black objects do the exact opposite. They absorb all wavelengths of visible light. Because no light is reflected back to your eyes, your brain perceives the absence of light as black.
